Job Purpose

Responsible for the effective day-to-day management of the full operation and customer experience offering in the Vibes & Encore nightclub outlets (including food, beverage operations and entertainment) with the aim of achieving profitability; maintaining products and standards of operation; maximising customer satisfaction; and delivery of the business objectives

 

Education

  • Matric or equivalent qualification
  • 3 Year Hotel School Diploma or equivalent National Qualification at a Diploma level

 

Experience:

  • 5-6 years in the food and beverage industry of which at least 2 years experience in a supervisory role within the beverage environment

Key Performance Areas:

  • Develop outlet objectives and deliverables in line with Unit operational strategy
  • Facilitate the communication and implementation of operational deliverables for the outlets including beverage, food services and entertainment plans
  • Plan and facilitate the delivery of entertainment, music and dj services relevant for the outlets
  • Implement necessary security responsibilities to ensure outlets are managed effectively and professionally
  • Communicate plans relative to promotions and strategies to relevant staff and stakeholders within the unit
  • Provide clear delegation of authority and accountability for deliverables

Shift Management

  • Put in place staff scheduling and duty allocations to ensure maximum coverage
  • Interact and be present on the floor during operating hours to understand and assist clients with requests, special requirements, recommendations, concerns, resolution of complaints, etc.
  • Manage staff appearance and floor appearance/ functioning of equipment and systems for the outlets
  • Manage the control of stock and operating equipment as per SOP for the outlet

Product Enhancement

  • Collaborate with the F&B Manager to complete a competitor analysis of food, beverage and nightclub entertainment product offerings including pricing comparison
  • Collaborate with marketing and entertainment to source and manage the relationship with entertainers, including dj€™s, that are relevant to the product offering
  • Monitor the use and storage of OE
  • Investigate variances / discrepancies and take necessary action to correct
  • Conduct product performance analyses / reviews and make recommendations to address opportunities and gaps

Operational Standards & Governance

  • Align practices with new legislative compliance around health, hygiene, safety and the environment
  • Implement sufficient control measures (including systems and processes) & checks within each outlet to mitigate any financial risk to the business. All staff in F&B to adhere the policy and procedures.
  • Work with internal stakeholders (maintenance, finance, HR, and security) to identify risk areas and address these
  • Monitor food, beverage and operational standards and processes

People Management

  • Manage staff conditions of employment, e.g. attendance, absenteeism, leave, adherence to policies and procedures
  • Performance contracting, reviews and development
  • Perform on the job training and coaching to close developmental gaps and build
  • Manage productivities and payroll costs for the outlet

Budget management

  • Participate in the preparation of budget forecasts & controls
  • Consolidate Capex requirements for specific outlets
  • Guide and consolidate the completion of Cost of Sales reports
  • Report on the financial performance of the outlets, including providing commentary with regards variances to budgets and forecasts

Customer Relationship Management

  • Provide input into the development of a CVP for the outlets in line with the unit strategy and guest feedback
  • Deal with any escalations / complaints
  • Support VIP services in various initiatives i.e. functions, events
  • Be present and provide management support in F&B outlets and operation

Stakeholder relationship management

  • Communicates department€™s objectives, standards and operating procedures to internal and external service providers as per SLA
  • Negotiate pricing to the mutual benefit of parties
  • Update partners on all event information
  • Provides feedback and reports back to F&B and operational management on the performance and challenges within the outlets
