Job Purpose

Tertiary qualification advantageous (3-year B Com degree or equivalent)


  • 4 years senior management experience in hospitality or retail
  • Experience in managing service level agreements / contract management
  • Experience in food & beverage services and standards advantageous
  • Thorough understanding of complex maintenance
  • Thorough understanding of legislation (SHE / LRA)

Key Performance Areas:

Amongst others, major duties and responsibilities include:

  • Ensure compliance with relevant health, labour and liquor laws
  • Contribute to the unit strategic process
  • Devise a business plan for operations at unit level
  • Implement and maintain a comprehensive operation by aligning departmental plans with the organisational strategy at unit and group level
  • Contribute to unit effectiveness in terms of operational and financially viable initiatives
  • Implement and monitor operational compliance in terms of strategic objectives
  • Initiate and maintain a budgeting system in line with unit financial parameters / procedures
  • Plan day to day running of the operations department according to business levels and ensuring guest satisfaction
  • Negotiate commercial terms (with General Manager) of all service provider contracts and determine operating standards. Ensure all service providers contracts are kept up to date
  • Implement and maintain budgetary control systems
  • Plan and implement an operational management system that attracts new business
  • Ensure that the service providers attending to the public areas / gaming floors, back of house, front of house, food court/restaurants and all concessionaires do so to the agreed standards
  • Ensure all guest service and hospitality related standards are achieved at all areas of Carnival City
  • Monitor all food and beverage pricing regularly, agree increases with the General Manager and monitor all Carnival City functions catered for by service providers
  • To ensure the highest standards of food and beverage service and presentation in all F&B outlets including the staff restaurant
  • Ensures team meetings are scheduled and conducted
  • Ensure that your own conduct in dealing with guests and employees is a reflection of the organisation¬Ä¬ôs values
  • Ensure high level of personal service and visibility
  • Implement and manage health and safety mechanics
  • Implement and manage procedures / standards in line with applicable service level agreements
  • Ensure that a system is in place for setting, communicating and implementing standards and operating procedures with internal and external service providers
  • Chair, participate in, and give feedback at regular meetings between operations, marketing, all concessionaires, relevant service providers, pre / post event and support services meetings
  • Prepare regular reports as required for business reviews, board meetings and other statistical requirements
  • Attend Executive Management meetings to report on all operational matters
  • Attend to all human resources requirements of the department
